2 Tbsp EVOO
2 Tbsp Unsalted Butter
5 cloves garlic, minced (i.e. through a press)
3 cups corn kernels (fresh or frozen/thawed)
4 Tbsp (!!) Cajun Seasoning (I use Tony Chaceree's)
Minced Italian Parsley

1.  Heat EVOO in skillet over medium heat.  Add butter and let melt.
2.  Once butter has foamed and settled down, add garlic.  Sautee for 3-5 minutes until just starting to turn golden.  Do not burn!  :)
3.  Add corn and mix in.
4.  Add Cajun Seasoning and mix in.
5.  Heat for about 5 minutes until corn is hot -- turn off heat and add in parsley.

Serve!

I've been known to use a bit of bacon fat instead of some of the EVOO when I don't want to eat healthy -- needless to say, it turns out great!  :)

Just tried this as a side along with some sliced avacado to serve with blacken grilled King Salmon. Great combo.
Thanks for sharing the recipe.  :)

John,
Check your local grocery.  Tony Chacere's is one of the largest commercially sold cajun seasonings available.  I'll bet your grocery carries it.  If not, remember the website I sent you for the hot sauce?  Check with them.  If they don't have Tony's they will have something just as good if not better.

Larry,

I wasn't sure, I never saw it at my grocery store, but then again I never looked for it. I just ordered a nice package from the cajun place. Still hasn't showed up yet.
