Nice Aged Smoked Swiss

I've got some hickory smoked cheddar that is close to two years old.  I just used some Gouda that was hickory smoke and almost 2 years old as well.  Dang was that good!

i have no idea why???

I think the longest I have kept any cheese was about 1-1/2 years, it is Cooper Sharp American cheese. After it was smoked I wrapped with plastic wrap and then into a zip lock bag. Never had any mold and was great. I think there are still one or two chunks hidden in the bottom drawer of the fridge. I did recently use a couple chunks and melted it down and added bacon and chives, then put into molds and allowed to reharden. Man was that good. Everyone at work flipped when they tried it. Then I took a couple slices and put on grilled chicken breasts and burgers. Fantastic.  :)

Just cut this cheese  :o open. Wont last long.
