Bought my Bradley in march and have done mostly Jerky from seasoning kits from cabelas. Looking to expand. Tried a brisket and family was pleased. Gonna try a butt this weekend. I'm also going to prep for hillbilly bacon for next weekend. Can't find Morton quick locally. Any suggestions on a cure ?

they have morton's as well as pink salt. They are SUPER great and I get most of my spices from them. Super fast shipping and awesome to deal with.

Hi CraigW;

Welcome to the forum.

Though Morton's Tender Quick is convenient, purchasing cure #1 and pickling salt is less expensive. There is a Morton Tender Quick substitute; Basic Cure. If you are not familiar with cures, you may want to look at Curing Salts. If you purchase one of the Morton's cures, for the curing you want to carry out, do not purchase the Morton Smoke Flavor Sugar Cure.

If you need a wet cure, I can post a basic recipe for that if you need it.
