Butt and Pastrami

I know weird combo!  I have company coming (again) so I took a butt out of the freezer to smoke.  It looked like it might be lonely so I took a corned beef out to keep it company.  I rubbed and injected the butt with CT and just salted and peppered it.  On the corned beef I used Uncle Louie's pastrami rub.  Rolling 4hrs hickory.





Will be back tomorrow....

I haven't taken a pastrami pic yet as it was late last night when it reached 150*, so I wrapped it up to steam tonight.  The 11 lb butt took 15hrs, probably because the extra meat.  So after a 4hr FTC......

 

It had great taste with the CT injected inside.

Here is what happened to the bone....

   


It was bigger than his head!  He's licking it to death...lol.

Looks like you cut acroos the top. If so, what does it do??? Perhaps help the fat to melt, or more surface area for rub?

It seems to get more of the "glue" and spices in it more, and it does seems to open up the fat more for melting.  Wheather or not its true or not lol I seem to like it.

He can't even gnaw a piece off poor little guy...so he just keeps licking it hoping a piece comes off! lol  Guess it's kinda mean to give him it.
