Water, cure, pizza mix.......ECA added last to the meat.



Meat mixed with 3.5 t ECA



In the LEM (Sorry blurry) Ready to stuff



17mm clear smoked and mahogany casings.





Tied and ready to hang and smoke (have a few on a rack to)



In my 6 rack



After the 1st hour at 130, going with the water pan and some Bradley apple.
