Can you take this chicken and stuff it?

I have a good friend of mine that almost cries when he comes over and I'm making sausage. He can't handle pork anymore and beef is starting to get to him also. He wants me to make sausage out of chicken for him but the few times I've made it I didn't feel it was up to my standards. He loved it but I know I can do better for him. He absolutely loves the seafood sausages I make but wants variety. Can you guys help me out with some ideas? I need something that I can drop off to him and he can grill it himself. Ann and I do a lot of meals for him but he's stubborn and needs to do things for himself sometimes. We got him a gas grill to cook on and he's in his glory so to speak. I welcome any help from you folks. Thanks. Patrick

Aidells makes a chicken and apple sausage that we have fairly often. I've never made one, but you could buy some and do a little reverse engineering on it and give it a try.

Thanks guys. From what I've been taught in the past thigh and leg meat works better in sausage. You also need some of the skin and fat with it. I'm having a hard time trying to figure out the cooking temps though. The best turn out so far has been to steam cook them until done then let them sit overnight before tossing them on the grill. arcs, that's a good idea on the reverse engineering. I'll pick some up at Costco today.

The aidells sausages are PDG IMO.  I would love to hear what you figure out[:D].  They do chicken/apple that would probably be pretty good to try

I whipped up a batch of chicken sausage this weekend and was really dissapointed. (Only because there was no leftovers)!!! Man it turned out good. I used thighs and legs and lots of onion, garlic and bell pepper. Apples and blackberries for some added flavor along with some hot sauce for a zing. Grilled them up and served with some onions and mustard and Kodiak Brown Bear Stout. Yeppers life is good!!! :D :D :D

Thanks BigSmoker. If it wasn't for folks like you I would be at a loss for ideas. I don't know what I'd do without you guys. Thanks again. :D

I rarely buy chicken sausage because they are usually dry but I just bought some from our local store. The chicken was spiced, it could have been more but also it had chunks of spinach and feta cheese in them. The sausages were good and moist.  It makes me want to make my own.

That is an interesting combo there Brad. I'm going to have to try that one next. I wonder what type of sauce would be good with that?
