Smoked peppers

Picked some jalapeno peppers the other day,,,,been wantin some red ones

Had a few Cayenne peppers ready also

Sliced the penos in half and smoked 4 hr with Pecan,,threw the Cayenne in there too

Gettin late,,,,,time to bring in and throw in the dehydrator

The Bradley racks slip right in my Excalibur dehydrator,,,,,gotta love it

And some smoked dried jalapenos

Yep

Got em all in a jug with holes in it waitin for the day

  Great find about Bradley racks fitting in an Excalibur!  Have both a 5 and 9 tray and this will work out great when I smoke and dry my peppers in a few weeks.

My Jalepino plant produced one itty bitty Jap this year, I give up >:( I sure wish I could grow some like yours.

Picked some more peppers this weekend, jalapenos and a few cayenne, soaked in salt water 30 min

Held down with a colander and a couple rock glasses

Dripped dry under a fan

Left the cayenne as, is

Stems removed and sliced the jalapenos in half

Another tray

And another

Smoker set at 145 F and loaded with 3 hr Pecan

When the smoke is done remove the water pan and let the peppers chug along all day, then slide the Bradley racks in the dehydrator and go to bed, check in the morn.

Oh Ya!

I dont grind till I need some, just dump them in a plastic jug with holes in the lid.
With them in solid form I can throw them in soups and stuff as, is.

What does the salt water do for them?
