A little Pastrami

They had rump roast on sale the other day so I got me a 10 lb hunk

Sliced in half, the left is gonna be Pastrami, the right is gonna be smoked roast beef

Measured out the dry rub

Mix all that good stuff together

Trimmed up

This is gonna make for some good sausage

Made a brine outta TQ, brown sugar, ground coriander, white pepper and ground thyme

Let that drip wile I clean up and get ready for the dry rub

Time for the rub

The other side

Wrapped up and all tucked in for 5 days of cure time, flip every night till done

i'm gona watch this one.   always made mine out of brisket, but i should try other cuts.

Did the flip thing every night and now its time to rock!
Un wrapped,,,,,,,,,,,,Smells soooooo gooood!

Rinsed then soaked for an hr,,,,,,,,,,,,30 min dump and refill for an nother 30 min

Dry rub and ready to rock

Smells soooooo gooood!

Interested to see how the pastrami turns out using rump roast. I love the stuff but haven't made any .... YET. :)

So what exactly the difference between pastrami and smoked meat (like Montreal style?).
