Just wondering if anybody wants to give me an input for lamb, cooking it for a meal is it ok to cook to a medium rare temperature, say 63 degrees?? (145 degrees f.)  Or is lamb one of those meats that they say should be cooked hot throughout??

I am doing 2 racks this weekend Chicago style greek town from the smoke n spice book 140 temps seem to be where it need to be .The majority fo folks say sear the meat both side before the smoke .Good luck and share what happen when your done with your lamb.Do not cook lamb all the way throughout no good then keep it to the rarer side. hope thats helps it all i know at this point .Others here will help ya out so good luck  ;D Ive done a little home work since my last post im a quick learner but a horrible speller.LOL. :P

I posted too late and had to try it tonight, did it to 145 degrees and it was perfect...a little mint jelly and it was great...just used some cracked pepper and some garlic powder...
