Excalibur Smoked Almonds

Started with 2 pounds of raw almonds. Cold smoked them for 3 hours then let them sit overnight. Roasted them in the oven at 350 for 30 minutes just until they started to smell good and turn golden brown. Let them cool down for 2 hours. Ground up some Excalibur seasoning that a wonderful forum member sent me. Mixed it with a bit of egg white to form a paste. Tossed in the almonds and pan fried them until the seasoning dried out on them. Let them cool down and tossed then about to prevent sticking together. HOOKED!!!  ;D
