Smoked Pheasant Breasts

Smoked some pheasant breasts for a friend she brined,seasoned and wraped them in chicken skins.
smoked for 6 hrs with apple,they were ausome,so tender and juicy.

Wow that a heck of a lot of pheasant breasts. You know you could probably keep one for yourself. I doubt it would be noticed missing from the flock. ;D

Smoked pheasant breast wrapped in chicken skin is gooood!

I like to dust the breasts with some celeray salt first

We allways use the skin from chicken thighs,,,,,the meat N bones makes for a killer a pot of chicken noodle soup  ;)

Smoking wrapped in Chicken Skin sounds GREAT! They ARE a dry bird compared to our yard birds. I would LOVE to try that ... since I do not have any more hunting dogs it may be a while until I get a Pheasant  :'(
This post and some of the responses reminded me of something that happened a decade or so ago.
I used to run around with a guy that raised Pheasants for the PA Game Commission and for Public Sale as well. He called me up and said "Grab your Shotgun and Blaze Orange .... Meet me at my House" ...... I did just that  ;)
He had several crates of birds in the back of his truck and a young German Short Hair in the Cab.
He went to 3 farms around  "The Neighborhood"  Each farm he would turn loose a few crates. Give the birds about 15 minutes then turn his pup loose to work with it. The Pup did great! It is amazing to watch a good Bird Dog go to work... not the finding but the "pointing" and waiting for the "Flush Command".  :)
At the end of the trip we had 6 or 8 birds and he said we would split them up. When he started cleaning his and he carved the breast off and was going to throw out the rest. I told him he can keep all of the breasts and I will take the rest. He looked at me like I was nuts and said "Deal".  :o
I made a VAT of Pheasant Noodle Soup that was EPIC and "Seal-a-Mealed" it into portions that would fit in my Thermos and had that for my work lunch for a good bit of a year ... a time or two a week. I LOVED it!   ;D
