GB Jerky

Made up some more GB jerky. I can't get Soy Vey around here but Coscto had this Rice Road teriyaki so I thought I would give it a try. I wanted to compare to Soy Vey so I made a batch of the Mock stuff.

Here are the 2 competitors. Rice Road on the left and Mock Soy Vey on the right. The Rice Road has a very nice flavor right out of the bottle and definitely sweeter than the Soy Vey. So I didn't add any brown sugar to the RR batch but did to the SV one.

And here it is after the smoke ...... this was a long one 13 hrs and some were still not completely done.

I was hoping that the Rice Road would be really good because it is easier to pour the stuff out of the bottle than to have to make up mock Soy Vey.  ;D  However there is something in the RR that I did not like after the smoke. I think it might be the ginger in it. I liked it right out of the bottle but something changes during the smoke. My wife really liked it though. But for me the mock Soy Vey was the winner hands down. I used the Mock recipe provided by Devo and the mix ratios provided by Kirby. Next time I might lighten up a little on the brown sugar and the ground red pepper. But this stuff is good. ;D 8)

Do you have a dehydrator. If so pop those babes in and give them a little dry time and I would bet you might like them even more. Or you might just put some of them and see if you like the results.

Kirby, I have an old round dehydrator. It works pretty good and I have used it before but because it round it is awkward to get the jerky all in. I didn't think it would affect the flavor but will give it a try next time. At least with some. Are you suggesting not smoking some and doing those in the dehydrator or smoking then moving to the dehydrator?

First I use cure in my jerky and I try to get the jerky up to around 150 in the smoker so the cure does it's thing. Then I go for a heavy smoke. I never finish it in the smoker. I like to finish it in the dehydrator. It allows the moisture to level out in the sticks and all dry the same. I just keep a close eye on the jerky in the dehydrator so that it is pulled before it gets too dry.

How many raw weight pounds of jerky did you shoot and what temp were you smoking/drying at?  The reason I ask is I have never had GB jerky take 13 hours even if I was running the Bradley and then the dehydrator at 150 degrees.

I did make bacon jerky one time that took well over 24 hours in the dehydrator.  Takes a long time to dry out all that pork fat goodness.  :)  Before anyone asks, slices of bacon in a dehydrator with a little Head Country Rub sprinkled on them.

I shot 6 lbs of jerky and did 1 hr at 120 then 1 hr at 130 then 140 until I got tired of waiting at around the 10 hr mark and bumped it to 150. I've made a note in my smoker log to run up to 150 after 1 hr at 140 next time. I did a small batch in my dehydrator before and it only took about 5 or 6 hrs. But my dehydrator is too small to take on this much.

I've been looking at a larger square dehydrator but I think my wife would shoot me if I brought home any more stuff that she has to clean up after me. Over the last week I have been making a bunch of sausage, jerky, nuts and CBB and she is getting a little tired of cleaning all the mess after me; grinder, stuffer, shooter, bowls, smoker racks, frog mats, kitchen aid, etc. We don't have a dish washer in our house because she didn't want one.  :o

If I would do that to my wife!! She would say" Are you kidding me, How would like to not see me until next Tuesday" and I would say "that sounds fine with me". And then around Tuesday My left eye opened just enough so that I could see her. ;D ;D

Good one  :)...... exactly why I don't want to p*ss her off.  ;)Might just have to wait for awhile before I make any more stuff. Or maybe now she would be willing to get a dishwasher. ;D

That's too funny JZ. My wife hate dishwashers too. We have built a couple of homes and none have ever had a dishwasher at her request. Having said that, I have a fairly large furnace room that I built lower cabinets in along with a large laundry sink. Add a couple of folding tables and I have a great sausage making area and I stay outta my wife's hair. Of course I do all the equipment cleaning though.  ;)
