Some snack stix with pepper jack cheese

Been awhile since I made some pepper jack Cheese stix.

Mixed up the meet with the spices, water and cure last night.  This morning I added the ECA and the diced up pepper jack and got it all nice and mixed up.  Sorry for the blurry shot.


In the smoker they went.  Will dry at 130 for 1 hr  and bump 10 degrees every 2 hrs until IT is 149-152 area.  Will use 3 hrs of hickory on these bad boys.


Enough ain't enough and too much is just about right.

Looks good so far. Will you have to rotate those so they cook evenly?

Nope.  Got a fan and I never rotated them.  Just took them out to bloom.  Took 6 hours from the time I put them in to dry til the time I took them out with IT of 152
