Woah hold up. An hour a pound? Everything I've read has said a half hour to 40 minutes per pound. Now I'm wondering if I need to rethink my entire smoke schedule. We're doing Thanksgiving tomorrow (Tuesday, 11/20) so this is an eleventh hour snafu....
