Turkey day

Since I had to work yesterday (Thanksgiving) I knew I wouldn't be able to babysit a 'bird in the oven' so I smoked a 15 pounder on Tuesday, day off.
Started with a coating of olive oil and a dusting of Penzey's Mural of Flavor, then into the Bradley set at around 215. Only bisquettes I had were Mesquite and Pacific Blend, thought the mesquite might be to much so I went with the Pacific Blend (4 hours worth). Took the bird out when the IT hit 160 and threw it into a 350 oven for a couple hours. Wife got home and wrapped it in some foil then into the fridge to await the big day.
Reheated for a couple hours while the wife fixed all the side items. Man was that bird delicious, couldn't really discern any flavor from the Pacific Blend bisquettes just a nice mild smokey taste.

Ooh that is the best part. Turkey,cranberries and mayo sandwiches. Lordy lordy. My mouth is watering.

I see you left the plastic plug in there. At what IT did it pop?

Do a google on Pilgrim Sanwhich, there are a ton of variations. Some eat them cold, others will heat them under a broiler before putting the top slice on.
