Pulled Picnic

I had a bad sausage day a few days ago and forgot to post the good results I had with the pulled pork on the same day. Here is the picnic rubbed with some EVOO and Jan's rub, just before the smoke.


And after the smoke - about 20 hrs. The colors are wrong since it wasn't really green. Lousy photographer. ;)


Then pulling by hand. This stuff was soooooooo juicy and tender.


Here's a pic of the bone and some of the meat before I finished pulling and taste testing. ::) Sorry for the blurry pic ........ maybe I got some of the juice from my fingers on the camera? :)


And this is the sauce I made for dipping using Habs JD recipe but without the JD since I don't have any. But that stuff was really good. Should have made a bigger batch.


What a great combo pulled pork and Habs JD sauce.

I loved this stuff but the next day the pork seems kinda dry, even if I reheat in the micro with some of the sauce on top. The wife is not loving it and I am likely going to have to eat whats left. So what do most of you do with the PP left overs to make it as tender as when it comes out of the foil.

I've never tried the JD sauce on pulled pork. I'll have to try that. If your wife is not going to eat any more of the pulled pork, you are a lucky man.  :)

What was the final internal temperature. Picnics are leaner then the shoulder and do not have as much connective tissue, so I generally will not take them as high as I do with the shoulder cut.

I use left over pulled pork in a variety of things. Usually sandwiches, but if for some reason it comes out dry, I use it in chili, casseroles, stews, I've even used it in spaghetti sauce - I just chop it a little finer.

that looks good. I was wondering about that picnic. I have never tried that sauce, I should give that a whirl, I'm a sauce junky. I finally nailed down my favorite sauce about a month ago I can't stop using it and people won't stop asking for it!

I was going to pull it at 185 but let it go to 190. Then I pulled doubled foiled and put into micro for about 3 hrs before pulling. It was really juicy and tender and I am a little surprised that it is somewhat dry when I reheat it. Still darn tasty though.

The wife liked the JD sauce too just not keen on the pork for some silly reason. :o

I would be glad to send out samples, but like the iceman sop'n sauce, I think I'm gonna hold onto this one.
