Enchilada cake

This works better with 10" tortillas in a 12" skillet and I call it "Enchilada pie" but I only had 8" tortillas and had to make allot more layers, so now we have a "Enchilada cake"
Brown 1 lb GB with a large onion, chopped, till beef is no longer pink and veggies are tender

Dump in a 8 oz jar of your favorite taco sauce and simmer till thick

Pour in some enchilada sauce just to cover the bottom and keep the tortilla from sticking

Now build the pie/cake

Some refried beans mixed with sliced black olives and green chilies

A big ol blob of sour cream

More cheese

Repeat

And repeat

Fill dish with enchilada sauce and cook at 350 F for about an hr, let stand 30 min and Wallah!

Theres close to a lb of sour cream in that baby and the wife still puts more on when its done ::)

Go for it,,,like I stated earlier,,,its easier to make,,,and eat with the larger tortillas ;D

It will only take 7 tortillas in you use the 10" ones

Give it a try,,,,,,,,,,,,,,youll like it,,,,,,,,,,,,just use the 10" tortillas, its much better that way
