Ring Bologna

I'm using Kevin's recipe again but stuffing these into beef rounds. This is a first for me. 3 hours of Pecan. I'll let the pics tell the story.

Sam3, Do you ever have issues with the thermometer that is stuck in the bologna coming in contact with the warm water giving you false warmer temps?  I have always wondered about that.  Maybe your answer will put my mind at ease.

Not really. Being the actual sensor is located on the tip of the probe, it was right in the middle of the bologna. I also used my Thermapen to check temps on the pieces that were not submerged. Same reading.
I took these to 156 before the ice bath.

Looks good Sam. Please let us know how the pickled sausage turns out. I tried it once and the pickle brine I found was not very good. I need a better recipe.

Kirby,
The one on the left is something I found on google. It's a pretty popular recipe.

1.5 cup white vinegar

.75 cup water

1/4 tsp cayenne

1  Tbs crushed red pepper flakes

1/4 tsp salt

1 tsp sugar
Heat ingredients until hot, let cool. Pour mixture over Bologna. Refrigerate.

The other is a NEPAS recipe, I believe he posted it on here once already. Much more aggresive with vinegar and heat.
