Question on pepper sticks

Just got emails that my grinder and pepperoni kit are on their way! Doing snack stick size,how many lbs of meat can I do in an OBS? Hanging, or laying on the racks? I'll be buying from Costco, and I know I can freeze some if I mix up more than will fit at once, or refridgerate and smoke em the next day, but I'd like to get an idea. Thanks,

I mixed up 4 lbs of venison, 1 lb of pork fat and 1/2 lb jalapeno cheddar and made 19mm sticks in collegen casings last weekend.

I just laid them on the racks, it took 2 racks to do about 3 lbs I would say. I vac sealed and froze the rest.  I probably could have crammed more on, I left some room. I could have done all 5 lbs easily using the 4 racks.

I was not sure I would like the casings (I prefer sheep casings but did not have any) so I did not do all the meat, I will do the rest when I get some

Maybe that gives you a rough idea, I dunno. I would limit it to 5 lbs to start with anyway

do you have stuffer? Makes it a LOT easier, especially for snack stick size!!!

Thanks burner that does help. I don't have a stuffer yet. I'll be getting one though as soon as I get clearance from the finance dept  ::)

PapaC, you can do a 5 pound load very easy in the 4 rack OBS.  If you have hangers you can get a 10 pound load.  If you are just a startin out I would recommend that you only do a 5 pound load.  If you don't have your stuffer yet and are planning to use the grinder attachment to stuff I would not do any more than a 5 pound load.  You will be pulling your hair out after stuffing 5 pounds using the grinder.


Enough ain't enough and too much is just about right.
