Smoked Antleope Backstraps

I made these last night and they turned out awesome I made a total of 3 backstraps 2 in a marinade 1 in a dry rub.

For marinade
I took 1c soy sauce 1c brown sugar and 1tblsp cajun seasoning, let marinate for 4-6 hours wrapped in bacon and smoked at 220 for about 1.5hrs or till about 125-130 degrees, medium rare

Dry rub
I actually used Duck commander cajun seasoning, a little salt and pepper and some applewood rub it was excellent. I also wrapped the backstrap in bacon.
I did use a old glass baking pan when I smoked these to keep them from drying out I placed all 3 in the pan with a liite bit of the marinade on the botom and did 30 minutes smoke with no heat just cause I knew the glass would hinder the smoke flavor some, so I added a little extra
