Brats and breakfast sausage

Pork butt finally went on sale for $1.69 (still waiting for $.99), so it was time to make brats and breakfast sausage.
Here's the brat mix for 8 lb.

Stuffed - Smoke and Stuff's 3/4" tube worked great.  I use the dowel rod and paper towel to push sausage out of stuffing tube at the end of the batch. 

Vac sealed and ready for the freezer.

Here's the recipe (from Kirby)

SEA SALT                                 72.40
WHITE PEPPER                         14.70
MARJORAM DRIED AND GROUND        0.80
CRAWAY SEED                                4.20
THYME                                           4.00
CORIANDER GROUND                      4.70
DRIED MUSTARD GROUND               4.80
TURMERIC                                      4.40
Grilled some up for supper since it got all the way up to 10 deg F.  Overall pretty good. The turmeric gives it a unique flavor (and orange tint), but still good.

And here's 14 lb of breakfast sausage (mix from Frisco near Omaha NE):

Made 2 oz patties so we can make breakfast sandwiches.  Formed and wrapped in plastic to freeze, will wrap better tomorrow for longer term storage.
 

Got my 900 watt finned heater today.  So hoping for beef sticks next week when it warms up.

Looks great. Not sure how to read the last couple ingredients. The have 3 different numbers?

Inadvertant post (fat fingers)--numbers cleaned up now!

That was Sam3's recipe. I was just passing it on. It has been converted to all gram weights and on our excel sheet.  It auto adjust all the spices when you change batch sizes.

Nice job!  I like breakfast patties...you can also crumble for gravy too!
