Venison Ring Bologna

While I was grinding up some venison. I remembered that I had saved some fat after trimming some Prime beef. So I sectioned out 8 pounds of venison and added a little over 2 pounds of beef trimmings to it. and ran it through the fine plate on the grinder again.



Then I mixed up some seasoning to make Ring Bologna.



Mixed everything up and ran it through the fine plate again. Talk about some tacky meat!!





Loaded up the stuffer and started making rounds.





Ended up with 9 rounds of bologna



Let the rounds rest in the fridge overnight and put them in the smoker first thing this morning. After 3 hours of smoke things was looking really GOOD!!



Once everyone was up to temp and had taken an ice bath, it was time to hang out and bloom for a few hours.



While packaging everything up I just had to have a little taste test. You know every now and then the stars align, and you pucker your butt just the right way, and low and behold. You get Perfection!! ;D ;D Either that or I screwed up and made this one perfect somehow!

Ya just stuff it, wrap it round the back of your neck and clamp it in front....POOF....Ring bologna   ;D ;D ;D :o

You gotta use BIGGER casings Curt not them little snack stick sized ones your used too!! :o

Hog casings would make for some REALLY big snack sticks,,,,,,,dont ya think  ;D
