First cold smoke with the new smoker. Smoked a variety of cheeses with the 12 year old. Sorry for the dark picture of the smoker, but that same day we just built a new smoke house and there was no electricity as of the time the pics were taken. Waiting at least 14 days before a taste test. We used apple wood for 2 hours.

From a noob that just smoked his first batch of cheese, and is very impatient: I would wait at least 3 1/2 weeks before a taste test. It will taste like an ashtray before then (I tried it every 4 days after 2 weeks of "aging").
