I'm new to smoking, How long will it take to cook a 8lb boston butt? How much smoke?
Same goes for the beef  ribs. This is my first time smoking with my new Bradleys. I have friends coming over , I want to look like I know what I'm doing.

8 pounder could take 16 hours or more depending on the wind or temp outside and how much looking youre doing. most put 4 hours of smoke. you can go with the 3-2-1 method for the ribs.

What I have been doing is smoking the butt in the bradley for about 4 hours at 225 or as close as I can get to 225. If it is cold outside  it might not get all the way up to 225 but I get it as close as possible. I then transfer the butt to the oven and cook at 225 until the internal temp gets to 195 then I do the FTC (Foil, Towel, Cooler) for a couple hours or so. Turns out great!

(in that order)

usually take 20hrs or so too Swim Dad.

Mine usually take around 1.5 hours per lb.  I have the dual elements.

3 hours smoked uncovered

2 hours wrapped in foil (with or without liquid of choice)

1 hour uncovered

There is no smoke in the last 2 - 1 part of the process you're just cooking the ribs
