We killed 6 hogs this year...( Warning the pictures are not for eveyone )

We killed 6 hogs this year and we butcher every year, it's a family and friends thing, it's a hell of alot of work but we do have a great time...and no we don't eat it all we sell alot of it...





We don't scald the hogs anymore we skin them...



These are hog stomachs ( hog maws ) they will be cleaned and the liner will be removed, I know some will turn up their noses at this... but in most cases they will be stuffed with potatoes, sausage,celery, carrots and other veggies, some are stuffed with oysters and other veggies...



Meat reciprocating saw sure beats the hand saw and is alot faster...



These young fellow are cleaning the heads, all meat is removed the tongue are removed as are the brains..



The kidneys are cleaned as are the tongues, some of the tongues will be pickled and the rest will go in the puddin...



It was a great day to butcher, we had a little snow and it was really cold, and that's what you want on butchering day to get the body heat out of the meat...

The meat has been cooked from the bones and this will be drained and carried inside where the women will pick over all of it and get any small bones from the meat and then that meat is ground for puttin and scrapple...

Putting the corn meal in the scrapple, and you have to keep stirring the pot to keep it from burning and you will think your arms are going to fall off...

Now that looks like a blast. I used to love it when my wifes BIL would butcher their hunt harvest. We would go over and help out and drink some good drink and cook moose or deer steaks. It would last till late in the night, admittedly on purpose but a goodtime was had by all. Looks like you all have a good time too.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

The sausage and offal recipes are slightly different but in Louisiana they call that a Boucherie.  Haven't been to one since I was a kid (before power tools).  Lots of hard work and community, not to mention great food.

That is awesome G9!  I would have loved to have been there to participate in the Boucherie.  Only thing I have seen noticeably missing are any signs of Blue Mountains. ;)

That's quite an operation you have going. A far better way of slaughtering and butchering that the big commercial operations. Keep up the good work and thanks for sharing your experience.
