My Smoker

Hello, I just wanted to show a couple of pics of the smoker I have been working on for the last year. I just added a Bradley Smoke Generator. It is a 3'x3'x6' tonge and groove pine box. I have 4 racks and I can smoke the fillets of 30 sockeye salmon at at time. I have been using a small propane burner for heat, but it doesn't reach the temps I need if I want to some ribs or that type of thing. So I am still working on a better heat source. I have been talking with iceman and I think he may be able to help me get the temps I want with a heating element that he knows about. Ok what do I need to do here to post a couple of pics?

You need to download Photobucket or a similar program and put your pictures there. You can then copy them over to the forum. It's self explaining and fairly easy. If you still have problems e-mail them to me or Olds or? and we can get them posted for you.

Just to let you know before I get any comments, my daughter who was 11 at the time picked the color and she painted it. ;D

The power cord that is running up the side of the building; what is that operating?

Great look job and your daughter taste in color works for me  :D

My question: Does the pine leach sap onto the surface or cause any type of off gassing? The boxes I've seen in the past were all hard wood.

I have an oven light inside and the other outlets are for the smoke generator and if I decide to change heat source and go electric I have the outlets. Most of my friends give me hell for the color but when I tell them who picked it they think its the best color there is for a smoker. I went with a kiln dried pine to keep me from having a problem with the sap. So far I havnt had any problems. Thanks for the compliments. As with most projects it is in work and I am always looking for a way to make it better.

Very nice. Is that an electric hot plate? How are you maintaining temperature? The BS rheostat approach?

I see you have the Weber near by for touch-up work ;D

I was using the hot plate to burn wood chips for my smoke, now I am using the Bradley generator. I have a small propane burner that I am using for heat. Yes the Weber is the only thing I use besides my smoker. As I type this I am in the second hour of smoking a few sockeye salmon, so far so good.

Okay. I'm off to the refer for some kippered salmon for lunch. Sweet looking. Kummok take a look at this. Bagger did good! Notice to all, no nuclear waste goo coming out of it. This is NOT farm raised for sure. Enjoy your catch there bagger. ;D

How long do you put smoke and heat on your salmon?

I know from what I have read that your fish gets 80% of its smoke in the first 2 hours, but I normally smoke the entire time I am cooking, as far as how long I keep the heat on depends on several things, thickness of the fish and the outside temp being 2 of the big ones. Generaly speaking I keep the heat on for about 8-10 hours. Today it was upper 40's here and I cooked at about 140-150F and the smaller pieces came off at 8 hours and I am pulling the rest off at just under 10 hr. I like my salmon with a little moisture still in it. I am not a big fan of jerky salmon. One thing I do when I first put the fish on the smoker and then every couple of hours is add a glaze, my fav is 1 cup of apple juice and one cup of dark brown sugar and a little molasses. It gives it a pretty coloring, which is great if you want to give away as gifts.

Your KB is a killer for the dial up folks.  On this thread you have posted a tad over 1 Megabyte in photos.

I would suggest not only making the foot print smaller, but reduce your JPG quality to 50%. Plus you can use the click to enlarge codes. While making the clickable large enough to be seen and understood at the same time. This way Dial up folks can see what your offering without having to wait an extended time.

As an average the last photo you posted will take 35 seconds for a good Dialup to download. Given that there are eight images those alone will take a dialup 4.6 minutes as an average to download. (This does not take into account the rest of this thread's KB.) 

In this example I using a click to enlarge codes with both photos reduced to 50% JPG quality.The clickable image here will download in about 1 second for dialups.

The codes to use if you don't know them are the following. However I replaced the [ ] brackets with  < > brackets so you could see the coding.

The URL than ends in -0.jpg is your clickable photo. This means you have to create two images.
