Andouille Sausage In The New Stuffer

Bought a new stuffer and was anxious to use it, so I mixed up a quick 5 pound batch of andouille.

Two days of curing with seasoning blend

Separated the big chunks for grinding

Ground up chunks

Smaller chunks that get mixed in with ground up meat.

The new 15 pound stuffer

Loaded for bear, or should we say andouille.

The first of many links.  Will have to release air from first casing next go round, but very pleased with stuffer.  This sure beats stuffing with a grinder.

Sausage looks great!
And you'll enjoy the stuffer.  Looks like a spin off the previous Cabelas Commercial--but there's only so many ways to make a vertical stuffer. 
If you ever want some longer tubes or different diameters for it, check this out for stainless long tubes.  Made for 1.5 and 2.125" flange at the stuffer nut.
