Plans for dry cure fridge

Does anyone have a step-by-step plan with some great tips as to how to go about building a dry cure fridge.

I'm working on one right now. I'm almost finished and do have it up and running. I will post all the details as soon as I'm finished.

I started with a commercial freezer I picked for... well free! I did have to repair it but it was just a wiring problem.

My design has nothing on the interior of the the cabinet with the exception of the thermalcouple and the humidity sensor. Everything else is on the exterior. My dry cure cabinet will be located in my heated garage with my smoker. My plan was originally to also use it as an incubator but I got thinking about it and if you were midway through the drying process on one batch and decided to do another I would have to come up with a different incubation chamber. I finally decided to simply use my big smoker as an incubation chamber. It runs excellent at low temps so it won't be a problem. The temp controller will do both heating and cooling at the same time so if I change my mind I could rewire it that way.

The only things I have left is to install the aluminum angles to hang things from and to install a through the wall fitting to have the humidifier on the outside of the cabinet. I will also need to give it a good cleaning. I've had everything up and running now as well. I've played with the settings a bit. So far its doing pretty good. I have the offset for the temp set at 1.5 degrees right now so I the temp swings about 2 degrees plus or minus. The humidity is controlled with the new controller I worked with Suyi on. I have it controlling the humidifier and the dehumidifier simultaneously. The dehumidifier circuit is a small fan that vents the cabinet. The controller has a programmable offset so the two circuits don't counteract each other. So far it's working very well. The only time it varies is when the cooling cuts in. It typically looses humidity so the humidifier cuts in and starts cranking up the level. If it overshoots by about 4 or 5% then the dehumidify cycle cuts in and lowers it. Then it typically stays where it should until the next cooling cycle, then it repeats.
