Prepping for St Patty's

Here is a 16.7 lb corned brisket on the office kitchen table just out of the freezer.  It can't wait to jump in the pot.  From my friendly Restaurant Depot - Love that store.  Hoping to rescue 1/2 from the clutches of wifey and make some pastrami.  It might be a momentous clash.  Wish me luck!

Never seen a corned brisket that big sold commercially (We're a bit provincial here sometimes) but would love to have one. As we say in Hawaii, "Erin go, brah!"

Wow that is a massive hunk of meat. I am going to smoke a corned beef brisket tomorrow. Pastrami sounds awesome where is the recepie or how do you guys suggest I smoke the corned beef?

LOL! Being Irish makes me wonder if you are aware that Irish people didn't eat corned beef? It was an Irish American butcher that started that rumor. Irish ate pigs chicken,fish and potatoes mostly. As rich only had cow,and was used a sign of stature. The trip was long to America and that's were the rich sold their cows. So they pickled it to survive the trip. But picky Americans snubbed their noses at it till an Irish American Butcher sold them on the Irish tradition that wasn't even true. LOL! My Grandfather on my dads side come directly to America with his 4 brothers. And he use to laugh at the stupid Americans who'll believe any thing. Now dont think  that I dont like it. As rubens are one of my favorite sandwiches. Happy St Patrick's Day! Oh and were having smoked chicken and potatoes with dried fish. A traditional Irish meal.
