Check this fellows Jambalaya video.He is entertaining, I chuckled from start to finish and his Jambalaya looks mighty fine

This guy has cooked up some good looking Jambalaya.  I add some diced ham and/or chicken if I have it with spices of thyme, salt and crushed black pepper.  This is a great one dish meal.

I made up a pot of Jambalaya last night. I used chef Dans method and recipe and used my maple smoked bacon. I didn't have andouille so I used a commercial smoked farmer sausage. It was very good though the farmer sausage wasn't the best choice.Next time I will use andouille.I've never seen it in the markets so I'll have to make some.I think I'll try the hot smoked recipe from Charcuterie
