Kutas Kosher Style Salami

Did  10 pound batch of Kosher Salami yesterday following the recipe from Rytek Kutas' book.

The seasoning



All mixed together



Stuffed into 1.79x21 inch fibrous casings



After applying 3 hours of Hickory Smoke



After Blooming overnight



Checking on the color with the casings removed
