New to smoking but not new to cooking.  Been cooking family meals for more than 20 years. 

Bradley is still in transit but I'm ready for it to get here.

The reason I chose to start smoking is the "set it and forget option".  I work 8-10 hours a day and have always been hestitant to jump into any cooking that required constant attention.  Well this looks like I will be able to start it at 8 and when I come home at 7 it will be ready to eat!  That is worth the dollar investment to me.  I've already read a number of posts and learned a lot.  Look forward to learning a lot of different entrees to cook, not just the standard smoke champions (brisket, ribs).  But ready for those too.  Thanks for having a resource available to answer my questions even before I ask.

If I'm at work, I have to be.  If its the weekend and I'm at home, I'm more concerned about "peeking too much" and lowering the temp.
