Brisket for the Nurses

All of my Nurses in ICU that took care of me in my litte episode were male and ex Military.  I promised them that I would make them a Brisket for Memorial day.  Planning on having it done and to the Hospital at Noon tomorrow.  A 13.3 packer that got all trimmed up and rubbed down with Jan's Rub.  That is my go to rub for Briskets (Thanks Larry and Jan).  Was going to use EVO or CYM as a base but decided to just go naked as that is how I have been doing them and they come out great.  Figure this will be a 19 hour smoke (but it will be done when it is done).  Put it on at 2pm and hopefully she will be FTC and ready to slice at noon.  Some will get vac sealed as all of the staff will not be at work tomorrow but it reheats great with a little apple juice.

All rubbed down and resting at room temp till the Bradley heats up


In the 4 rack at cabinet temp of 225 and getting 4 hours of Hickory


Yesterday I did a 5 pound load of snack stix for them and will present them tomorrow.  The seem to always be on the go and miss their lunch or supper and a few stix my just keep them tied over on their 12 hour shift.


Enough ain't enough and too much is just about right.

I cooked the brisket at 220 instead of the planned 225.  She went in at 2pm yesterday and at 8am this morning the IT was at 186.  Did a fork tender test and she flaked off so off she came and into FTC for 2 hrs.  Sliced up at 10am and foiled to take to feed the Nursing staff.  One Nurse said he had never had Brisket and one Nurse was raised in Texas and was boasting about how good Texas BBQ was.  I just stood back and let them dig into it.  Watched the Texas Nurse dig in and when he took a bite he turn to me and said....."I've had lots of Texas Brisket and I have to tell you this is the best Brisket that I have ever had".  That comment made my day. 

Foiled and will be wrapped in a towel and into the microwave for 2 hour rest.


Out of FTC and slicing.  Had to slap my wifes hands as she kept grabbing samples. Very moist and very tender.


Forgot my phone and camera so no pics of the Nurse's enjoying some Brisket.

That was my Memorial Day Cook!
