Hello- Introducing myself and what I have learned here!

    :)Hello all!  I am Paula and I have been lurking here for over a year.  Here are a few things I have learned, cooked,  and purchased thanks to the great information on this board: 
    In no particular order

    -Purchased a Bradley Original Smoker in August 2012
    -Smoked a turkey, turkey parts,  chickens, salmon, black cod, chicken wings, jagerwurst. canadian bacon, regular bacon, a homemade smoked Christmas ham from fresh pork,  pork spareribs, brisquet, non-brined salmon to flavor with smoke then baked in oven, smoked almonds. 
    -Learned what a 3-2-1 is
    -Learned what FTC is
    -Learned how to deal with rubbery poultry skin
    -Purchased the Big Easy to deal with it!
    -Learned why my Bradley  would get stuck and keep advancing bisquettes and how to fix it.
    -Learned how much smoke to apply to my tastes
    -Learned which smoke flavors I like the most with the different meats I was smoking
    -Rigged up my Bradley with S hooks to hang sausages
    -Learned about injections
    -Soooo many other things I can't even remember them all!
    -My friends and family are happy to help me experiment anytime.  :) 
    So I want to thank you for your help and wonderful forum.  I'm super hooked on this way of cooking, and hope to be able to contribute once I feel like I know something that would be helpful.

Thanks all!
I do have a couple of photos of the stuff I have done.  I didn't document every step but have some final photos.  As soon as I can figure out how to post a photo, I'll try it out on another thread. 

BTW, in this forum will it always require me to do the security thing- I mean where it makes sure you're not a robot by putting in the mystery letters and answering questions before it will post?  Or is it just because I'm newer and after a few posts it will drop that?  My eyes are not good and it's hard to see those characters.
