I will be doing three in the morning for the family 4th weekend.
Has anyone figured out how to gather all the drippings that come from the cooking or do you let it go to the bottom of the BS?

Best I understand the correct procedure is to let it drip.  Just don't fill your water bowl to full or it may overflow.  Just remember low and slow and don't open the door.  I use an electronic polder when I do brisket.
