new kitchenaide suggestions

Just picked up a Kitchenaid Pro 600, best part was I got 20% off, in store coupon. anyways, for those that have them, any accessories you suggest, any that are complete fails?

I have most of the accessories for the kitchenaid. Though I have been getting ready to move for the past 6 months, I have either packed them away or I purchased them and put them on the back burner until I get to my new place and do the unpacking. Keep in mind I was able to pick up all of these via craigslist. I have the juicer, rotoslicer, grain mill and meat grinder (I have not yet gotten the sausage stuffer attachment to it yet). I got the meat grinder mostly as a backup or if someone wanted me to show them how to make sausage. Though I would suggest keep you eyes on craigslist every once and a while, you never know what accessories may show up.

my meat grinder attachement came with the stuffer as well.  dont bother with it anyways....lol

I mistakenly put in a couple hard ice cubes to clean the meat out of my grinder one day this spring and the force blew the collar that holds on the grinding plates.  Have yet to find where I can get a replacment one...any suggestions?

K we'll I picked up a 3 pack on base came with grinder, slicer, and some fruit/veggie strainer $120 for all 3 saved a few bucks anyways.

If you use the grinder make sure you trim all the silver skin, gristle, and stuff like that before you run it through or it will clog up real quick, I tried to use the wife's to grind some breakfast sausage once, it got the job done but took a long time with a lot of taking it apart and cleaning. I started using the dough hook to make the beer bread and I'm going to give it a try on the next crusty bread loaf. I have thought about getting the pasta maker attachment in the future.

We've several attachments (beyond what came with the unit), and only use two regularly:

  • Meat grinder - use it most of all - always grind our own burger meat and free form sausage - never purchase burger or sausage any longer because we have complete control of fat content, spices, and meat quality
  • Pasta maker - if you like pasta, then you will love home made noodles - this attachment works flawlessly, and is all metal for strength and longevity - just about guaranteed to make the best pasta you will eat
  • Juicer - used it once and now it sits somewhere (don't remember where we stuffed it)

I have the grinder attachment, and it works well for grinding up to 10 pound batch. I find cutting the meat into strips works a lot better then cutting then into cubes.  As Saber mentioned, clean as much sinew off the meat at you can, or you will need to clean the blades several times during the grind. It the sinew builds up too much you will get smear. I have a pair of forceps, and they work great for removing the sinew from the blades. Also if you go on eBay and search around you will find custom made grinding plate. I now have two larger grinding plate sizes.

Also I find an extra 6 quart bowl comes in handy. You may also want to check out the 3 quart bowl accessory. It works great for smaller batches of frosting, and cookie dough; but I have hot tried it with bread dough.

We've had a kitchenaide for many years.   Have no attachments.   I already have an LEM 1/2 hp grinder and an LEM 5 lb stuffer.   What I have used it for is mixing smaller batches of sausage.   Will take 5 lbs of ground meat.   Add the spices and water and walk away.   Does a great job of mixing.

Thanks for the info, I'll definitely look into stuff. Saber it seams to me anyways that 3 cups of flour just ain't enough substance in the bowl for it to really grab onto. Was reading in the book that came with it last night and found that it says  for rapid breads like this one to use the flat beater so I may give that a shot.

I used the KA for a loaf of beer bread and it worked good for that with the dough hook, of course I had sifted the 3 cups of flour right into the bowl so it may have had more volume and then the bottle of beer may be just enough more liquid than the crusty bread to make it work. I did have to use a spatula once to push down some of the stuff for the hook to grab it. I may try the crusty bread tonight and see how it works out.

yeah that was my experience was i scraped the bowl and pushed stuff down probably 5 or 6 times before it would grab most of it. I attempted the basic white bread recipe out of the kitchenaid book and turned out pretty good. I'm thinking i may just double the crusty bread recipe, i think that long loaf pan will handle it just fine. Kudos and thanks again for that link/idea, LOVING the long loafs.

I don't know if you have been doing this or not, I'm new to baking so I just saw this tip on food network the other day and it has increased the volume of and the quality of my crusty bread. Instead of scooping out the 3 cups of flour they said to spoon the flour into the measuring cup, shaking the cup to level it as you go, then use a fine screened strainer with a handle to sift the flour into the bowl one cup at a time. I tried it on a couple of loaves and it was unbelievable the difference in quality. Again if y'all are doing this already, my bad for being late to the game, if not then give it a try, it may even make the dough hook useable, I did this for the 3 cups of flour in the beer bread recipe and only had to scrape the sides of the KA bowl once towards the end.
