I bought random cheeses to prepare for the holiday season!!

Nice variety, I'm assuming you took them out of the package before smoking....lol

Then into the smoker for 2 hours of apple smoke with a tin foil pan full of ice in place of the drip pan.

Finished product! Will let test for a little bit then gently dry the sweat off!

Others may have a different opinion but I would move that ice to a rack above the V-tray and have water in my puck bowl, I don't think the ice is going to put out the old puck and you could end up with some nasty smoke from the smoldering old pucks. Just my humble opinion though. :)

I like that idea! It seemed to be putting it out, BUT I will do that next time! Thank you.

As long as it's working for you, go for it, that's the beauty of this site, every one has a way of doing it and if it isn't dangerous from a food safety or fire hazard it ain't wrong. ;D Enjoy your smoke and your cheese in a couple weeks

You will love the smoked horseradish. Always goes fast when I smoke it.

I've done the horseradish before, and it was gone before everything else!!

I see your from Pa, if you can buy some Cooper Sharp, try smoking it. It is by far the most popular cheese I smoke.
