Italian Sausage!

Thanks to Sailor for the great recipe and Kirby for the mixer, it worked great!  Sorry forgot about taking pictures until the end.  These are Sailor's Italian recipe, smoked.  The pork is from our own pigs.  The wife is making some home made buns and she is just pulling some fresh kraut out of the crock in the basement, I'm thinking the pants are gonna be a little tight tomorrow!

They look great!! What a great project with the kids. I still remember the times making sausage with my dad when I was you children's age. The texture looks fine for dogs. I sure could get into some of those. I am glad the mixer worked well.

Kirby the mixer worked great! My wife was really happy with the texture.  Now I gotta talk her into one of your stuffers! I'll get some pics of the mixer in action next time.  We used some natural casings i found in the freezer from last season, hog casings I believe.   The kids love sausage making, I try to make sausage on one of my days off, throughout the winter.  Would really like to try some of those Omai bags... that has been an interesting post for me.
