I am making a batch of kielbasa for Christmas and want to send some to my sister. The sausage will have cure #1 in it. I was going to vac seal and freeze it and when time to mail, I was going to wrap in foil and a couple of ice packs.
I was going to take it to the post office late in the day and ship it overnight to her (from AL to MA).
I was not planning on putting it into any type of cooler. The package will also include some smoked cheese and some of the dry pepperoni and salami.

Any recommendations? ( aside from sending it to your house  ;D  )

Gus, all I can think of is make sure not to send it on Friday, and be sure to waterproof the box. If it leaks, the USPS (If that's who you use), won't like it, and may even hold it for inspection. Ask me how I know  ::)   Other than that you should be fine. Oh, and obviously make sure the recipient knows it's coming. Good luck.

X2, all US shippers will have issues if moisture from condensation or leakage get's outside your box, so you might want to look for a cheap Styrofoam cooler to put inside a cardboard box.

As others have stated you should be fine. If sodium nitrite has been added, it is no longer fresh sausage. Even though you may not have smoked it, you can treat this just like any sausage that you would fully smoked/cooked.

USPS has highest rates for overnight.  UPS or FEDEX will beat them everytime.

I don't know if this is against the rules of shipping companies but maybe dry ice?  I know there is a local grocery store here that sells it in small packages i have thought about getting it for long car rides home before! I also think if u treat like you are FTC the meat then the cold will stay in for a certain amount of time.

Dry ice is ok to ship with but you have to make sure no condensation can form on or soak through the outer shipping box
