Deer Jerky NEED Help!

Can someone tell me the following...

How long do I smoke using Mesquite?

What temp do I set the oven to?

How long do I run the oven?

Using a Bradley 6 rack
Meat is a little less than 1/4 inch thick

Others with more experience will chime in, but to get you started, I would set temp at 160, smoke for two hours, and then dry for approx two more hours. Just watch it and check for the consistency you want in the final product. Good luck.

I set the temp to 150 F and smoke for two hrs.  Then I move it to a dehydrator.  Mine takes about 5-6 hrs total.

Jerky is done when you can bend it and the surface will crack but not break.  If it breaks it's overdone.
