How long should I cook it for and how long to smoke?

How long to cook it?  Simple till its done!! Sliceable roast 148-150 Internal temp. Then hold for 20-30 minutes under foil.

I would suggest 1-1 1/2 hours of smoke

That looks really good. I've eaten lots of deer, elk and antelope but never had the chance to try moose (not to many around these parts ya know). One thing I would recommend to you would be a remote thermometer to monitor the internal temp of your cooks. Bradleys are notorious for slow heat recovery whenever the door gets opened, a remote thermometer lets you know where you stand without having to drop your cabinet temp.

Yes, that and a PID are next. What do you recommend?

I use a maverick thermometer that monitors both the temp of the cabinet and the meat at the same time by using two probes. I have a single probe Auber pid that keeps the set temp within a couple degrees .

Do you have the ET-73?

Yes, and it works pretty good. There are a few things about it I'm not wild about, one being you have to remove the back every time you turn it on or off, I don't believe this is the case with the 732 or the new 733. Others have complained that the range between the transmitter and receiver isn't very good but I can't say this has been an issue for me to this point. I guess if I were doing it over I would probably go with one of the other models.
