Smoked Chili

We are having a bring your chili to work day next week. Anybody have any suggestions for a smoked chili?

Tenpoint5 has a chili recipe, not sure if any of it is smoked but I am guessing once made, you could put into a open pan that will fit into you smoke turn on the heat and smoke for a 3-4 hours. Should take on some smoke flavor.

Smoke some brisket and chuck roast then cool overnight in fridge, trim most of the brisket fat and course grind to make your chili. Then spice as you like it and slow cook it on the stove or in a crock pot. The longer the cook the better the chili and if you can slow cook one day, refrigerate and slow cook again the day of the meal it will be awesome. And of course always remember that real Texas Chili doesn't have beans! ;)

UncleAl, I've added smoky flavor to chili simply by topping the bowl of chili with smoked cheddar.  I grated some ends from the block of cheese I was snacking on (the ends are usually too smoky for me to really enjoy just snacking on them).  Was surprised that you could actually taste the smoke.

Got me thinking about making a more heavily smoked "cooking" cheese and a more lightly smoked "eatin" cheese.
