I needed a quick, easy, and light lunch today so I broke out the good china, some ritz crackers, a couple of leftover SRG chicken legs and sliced up some pecan smoked gouda, mild cheddar, Jarlsberg, and Havarti Dill. All the cheeses turned out great.

Sounds like a good lunch. I skipped lunch today, maybe I should go throw something together now that you inspired me?  :)

I can't imagine you don't have lot's of choices in that cheese fridge of yours to "throw something together" with. ;)

Must be the thing to do today.  My BIL and nephew are visiting so while we were waiting for the ham jerky to dry, we got into the summer sausage and smoked triscuits.  Also the tube smoked swiss slices that took on so much color they looked like American, turned out great!  Too busy eating for pics.   :( :(

Everything is better on a triscuit. Or is that ritz?  ;D ;D ;D

Nice, I love lunches like that.  We had a similar lunch, smoked gouda and cheddar, smoked rainbow trout and some wheat crackers. Oh, and a glass of red wine too.

I just fill up the smoker when doing cheese or eggs.  They're good right away.  No waiting necessary.  EXCEPT when I used the tube smoker.  Then I had to wait about a week.

I'm gonna have to give that a whirl. I love triscuits, especially the fire roasted tomato and olive oil flavor. By far my favorite crackers.

Thanks Joe, I'm going to have to try this soon.

I was difficult, but I did manage to put something together to snack on.  Had to have some smoked pepperoni to go with the cheese.  :D
