The other day my daughter went to Sams Club & bought 2- 4.5lb Chuck Roast & 1-4.5lb Sirloin Roast. I'm kind of new to grinding meat(only did it about 5 times), but this time I noticed a few things I found concerning me wither these Chucks might be bad. I took a few pictures (not really good @ pictures) anyway in the pictures you can see some Black things & I have no clue what they are, also there are 2 pictures of a piece of the meat- In the 1 picture you can see 1piece of Red meat that has a darker color piece of meat in the center of it. When I first cut this piece the piece separated like shown in the other picture. The dark piece looks terrible. Is this normal?

I do not take chances with meat. Take it to the butcher where you bought it at. They will probably replace it.

Thanks guys. I know the saying is when in doubt, throw it out, or in this case return it. You know I haven't really cut a lot of meat up to grind, so I didn't know if this was consider normal. Glad this forum is here & you guys, so once again THANKS.

Hate to say it because it sounds gross...but looks like blood clots and veins.  Just cut them away.  Just want you to be aware if you take it back that might be what they tell you.  Have seen them in whole chuck rolls.

I have cut a lot of chuck for grinding and for stew meat, and have not run across anything that looks like that.

Well I forgot to reply. My Daughter called Sams Club & they told her all she had to bring with her were the empty cartons with the UPC on them. I had given my daughter the cash money to buy them, so I sent her back. Before she left I gave her the empty cartons w/UPC, Ziploc bag with the bad parts & a big disposable Aluminum pan full of the cut-up meat just in-case. By the time she got there the person she had talked to earlier had left & she said they started to give her a hard time, so she told them that she had the meat out in the car & if they wanted she would bring it in, then they quickly said no that is OK & gave her a refund. She went & purchased 2 new Chucks & they turned out great. This is twice now in about 2or3 months I had a problem with meat from Sams. The last time was with their Wright Bacon. I bought about 5 of their double size Maple Bacon(love it) & 2 Apple-Wood(A close second). The next morning I went to cook some Bacon & noticed it had slime on it. Checked the date & sure enough it was about 10days past due. I usually check the dates, but didn't that time. They took it back no questions asked. The Chuck that was in the Aluminum Pan went to my Niece-she has 3 Pit-bulls. My niece was happy & the Pits were happy, me & the crew were happy. Oh I want to say I have bought meat from Sams for many years & other than the 2 times I mentioned NO PROBLEMS.

Glad it turned out ok.  I won't drive across a Sam's or Walmart parking lot, much less go into one of their stores.

If you buy that much bacon you ought to consider giving 10.5's recipe a try, if you like Wright's bacon you'll love this recipe and it's easy to do.
