Wanted to try something different with the crusty bread recipe and do some prep cooking to make this weeks dinners easier. Last night I mixed up a couple of batches of dough and after breakfast this morning I made my first hot dog buns with my new bun pan and did a flat bread experiment with the other batch.

Here's the finished buns, 350 for 30 minutes with an egg wash

Here's the flat bread laid out before it's trip to the 350 oven

I sprayed them with olive oil and dusted a couple of them with garlic salt and Italian seasoning, I didn't get the color I wanted so I think next time I'll use melted butter or egg wash

Judy's been wanting me to break out the Panini grill with some of the breads I've been making so I took some of the flat bread, buttered the bottom and layered pecan smoked swiss, muenster, gouda and some Canadian bacon from the freezer. Here's the before and after.

And plated up on the fine china for lunch, she said it was the best Panini I had ever made her

She likes hard boiled eggs for after her morning workout so I made her a dozen and a half of the oven baked hard eggs, 31 minutes at 350. It's so easy, put them in the muffin tin then when they come out of the oven they go into an ice water bath and then the fridge. Don't worry about the brown spots they come off in the ice water bath.

To finish the day off I have a lemon pepper chicken in the SRG for a meal or two this week and I'm doing some Carne Picada Taco's for tonight's dinner and some lunches, I've got some smoked brats and some venison brats in the freezer to use with the hot dog buns.

Everything looks really good!  I'm intrigued with the oven-baked hard boiled eggs, never tried them, sounds interesting and good.

Just out of curiosity (SWMBO's more than mine), what's the deal about hard-baked eggs? How are they different from hard-boiled?

They just seem to be much easier to get perfect every time you make them, there's no guessing on time once you figure your oven out, you never get blue or green yolks and they are always easy to peel.

Thankfully everything is finished, we've eaten dinner and the cleanup is done. Here's the SRG Lemon Chicken, after it cooled I quartered it up and bagged it for later this week

Here are all the players for tonight's Carne Picada Taco Meat

Seasoned, browned and cooking down 4 cups of water to bring out the tenderness

Meat's all done and ready to make taco's

And last but not least, here's all the ingredients for a make your own taco dinner and yes that's smoked cheddar to grate right on your taco

Not to hijack, but I just made a few this past week by steaming.  Didn't have the proper steaming setup that I had found online, but with one more slight alteration to what I did (11 minutes over boiling water with a really loose fitting lid <will go 12 min next time> followed by 20 minutes with the burner turned off), it may be my go-to method from now on.  Yolks were still bright yellow, just ever so slightly undercooked for my taste.  Peeling wasn't great, but I've had issues with that no matter how I cook them, so wasn't really a concern...also was minimal trouble compared to normal.

What a busy day for you!  The panini looks perfect!  What a great idea!  Love the baked "boiled" eggs...

Add one more to the list of those who will trying the baking method for hard cooked eggs. I assume a preheated 350 oven, then 31 minutes? I will probably just try a few to start and then "dial in" the time. Thanks for a great idea, and just in time for Easter eggs!
Where there's smoke, there's HAPPINESS!!!

Yes it's a preheated oven, the 31 minutes is what I've found works for 18 eggs, I think it's about 29 minutes for 12 eggs in my oven so the number of eggs does have some effect on the time.

Scott, the hot dog buns were great, more gourmet style than grocery store style. You should give them a try for sure.
