I am not new to smoking, but new to Bradley.  I have some london broil strips marinating in the fridge and I look forward to drying them out tomorrow.  They are soaking in Soy Vay Teriyaki sauce and I added red pepper flakes to give it that sweet heat.  I plan on smoking for 3 hours using mesquite and continuing on for another 4-5 hours at 150.  Thank you all for the insight you have provided on this forum.  I look forward to learning your techniques.

Wildcat: Ha!  You're right that, apart for the tourists, most people that reside here are either native or military.  I am retired Air Force.

I am kind of a hybrid. I was born in Miami and went to High School in north GA. I spent 8 years active duty Army during the Viet Nam years and then finished my career with the military as a civil servant on a local navy base.
