Turkey Breasts

Hi All,
Had a very successful smoke over the weekend. I smoked 3 whole turkey breasts. Brined them the night before, rubbed them with a rub I created (variation from Paul Kirks book), then smoked for approx. 5 hours. FTC'd for 2hrs and then chilled. Tonight the are going on the slicer and then I will vaccuum seal them and freeze. Used Maple pucks this time and am very pleased with results ;D :P

What thickness are you slicing and target purpose?  Smoked turkey salad...sammiches...1/4 inch thick for reheating as plate meat main course?

Sammiches is what it will be used for. I'm preparing for a party. next I will be doing pork butts for pulled pork. This time I am also going to smoke beef chuck roasts and mix the two together (after pulling). i was told this makes for a great BBQ.

I love sliced smoked turkey or chicken breast for sammiches :P :P :P.  If you have the Paul Kirk championship BBQ book try the "snail's sprinkle" for your pulled pork.  I really like it but I kick up the cumin a little.  I've never heard of mixing the pork and beef but it sounds good.  Good luck with the party and keep us posted on the mixing the 2 different meats together.
Some people say BBQ is in the blood, if thats true my blood must be BBQ sauce.

Smoked turkey and chicken also make killer hot open face sammiches with gravy over it and mabe a dollup of mashed taters. The mixed meat deal sounds great. I've mixed them before in wraps but never tried a pulled sammich with both. Have fun with your party Bass ;D.

I agree, it's almost like thanksgiving ;D

I had a dry spell from smoking :( with moving into a new house and then emptying my mother in-laws house right after that time was cramped. But now the dust has settled and I am "jones'n" for a smoker full of meat. Best of all it was all my wifes idea :o. She wants to serve smoked meat at the party so who am I to argue ;)
