Pastrami/Cheese Quesadilla

Have some of the GMG DC Pastrami left so i making some quesadilla for lunch.

Yeah i know swiss cheese and krout but i no got any.

I see the pattern on your china is the same as mine!

I have not checked yet but I am thinking the DC cabinet temp read out is not accurate. It does keep the temp steady but I do not think it is as hot as the digital readout is indicating. Of course I may be opening the lid too often. I know the meat probe is off. How about yours? I think the next cook I will have to test it with my high temp probes.

My meat probe is not accurate as well. I know the left side of the grill is hotter than the right side but I never checked it. Maybe the next time I'm using it I can put my 2 probe mav in one on the left and the other on the right to get a better idea. I have not done anything to worry a lot about it being off a little but it would be good to know so when it is critical I'll have the correct data.
