Bacon! (cure then freeze then smoke)

Hello all;

Back in late February I cured 15lbs of bacon with a dry cure. Just as it was cured and ready to smoke, I injured my back and couldn't even open the fridge to look at it!

After some conversations in the Curing section, I let it cure for a few more days (10 in total) until my daughter could help my wife wash it off and bag it and freeze it.

I'm finally out of hospital and have had enough physio that I could think about smoking it, so we defrosted all 18 pieces and got it into the smoker on Saturday.

Here's the photo....



After 5 hours with pecan it was at 145F so we let it cool and then in the fridge overnight. It was sliced and bagged yesterday!

This was a success, even with the interuption between curing and smoking.

Very happy, especially since while I was in hospital pork prices here have nearly doubled!

There has been quite a few people asking about curing and freezing bacon for later smoking. Looks like you proved it works fine.
