Hi all, I have a digital Bradley smoker that I bought a few years ago and have been on the forum before, but I have been away, so thought I would reintroduce myself. I live in Beautiful BC Canada, but my hometown is Corsicana Texas, a small town 50 miles south of Dallas, TX. I do the smokin at our house, not Hubs. I guess it's the Texas in me. But he does like to eat it.

Today I just put in a Brisket set it to smoke for 4 hours, I used mostly Mesquite pucks but also used Special blend and a few Hickory as they were all open and I need to use these up. I'll finish it in the oven. Any info would be appreciated.

I've probably forgotten more than I knew.

Welcome back to the forum from down home in Texas, Kemp near Cedar Creek Lake to be exact so I'm fairly close to Corsicana and go through there on the way south to Waco or San Antone.
